Today, I’m excited to feature a recipe from Teralyn Pilgrim, author of the excellent book, No Scrap Left Behind: My Life Without Food Waste. Read her book! It’s funny and insightful and takes an honest look at what it really takes to reduce food waste amid the demands of modern life.
Here’s one of her ingenious ideas: Fondue Leftover Soup. It may seem like your leftover fondue and dippers are a lost cause, but not so fast, says Teralyn. You’re just a couple steps away from a comforting soup the next night. Below, find her guidance for souping up your fondue leftovers. If you don’t have your own go-to fondue recipe, you’ll find the one she uses at the end of this post.

Description
A soup made from your fondue leftovers!
Ingredients

Leftover cheese from a fondue dinner

Half cup of milk (plus more for making adjustments)

Leftover dippers from a fondue dinner (excluding fruit)

Leftover bread from a fondue dinner, if you have it

Olive oil
Instructions

The day after you make a fondue dinner, heat the leftover fondue in a soup pot with a half a cup of milk.

Once the cheese melts, stir in more milk until you reach your preferred consistency for soup.

Stir in the leftover dippers from the night before, except the baguette cubes and fruit.

Toss the baguette cubes in olive oil. Toast them in the oven until firm, but not as hard as croutons.

Top each bowl of soup with the baguette cubes.

Cheese Fondue

Here’s a go-to fondue recipe from Teralyn Pilgrim!
Ingredients
For the fondue:
- 1/4 cup butter
- 1/4 cup flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp dry mustard
- 1/4 tsp Worcestershire sauce
- 1 1/2 cups milk (plus more for consistency)
- 2 cups shredded cheese
Fondue dippers (anything you’d like! here are some ideas):

Baguette cubes (or cubes of another kind of bread that will standup well to dipping in cheese)

Broccoli

Cauliflower
-
Boiled or canned potatoes

Cherry tomatoes

Bell pepper pieces
-
Sausage
-
Meatballs
-
Apples
Instructions
- In a saucepan, melt butter over low heat. Whisk in flour, salt, pepper, dry mustard, and Worcestershire sauce.
- Cook over low heat, stirring until mixture is smooth and bubbly.
- Stir in 1 1/2 cups milk, heat to boiling, boil for one minute. Stir in cheese and heat over low until fully melted.
- Serve fondue with baguette cubes and dippers such as broccoli, cauliflower, canned potatoes, cherry tomatoes, bell peppers, sausage, filet mignon, meatballs, apples, pears, and so on.
