DC Food Recovery Week is happening right now! We’re taking a break from our regular EatOrToss programming to urge our readers in Washington, DC to take advantage of a series of classes, volunteer opportunities and happy hours dedicated to the many ways we can tackle the paradox of wasted food and hunger.
The easiest way to get involved? Visit a #RescueDishDC restaurant any time during the week! More than a dozen restaurants are spotlighting how truly delicious it can be to minimize food waste. Little Red Fox turns extra latte milk into ricotta. Santa Rosa Taqueria pickles cabbage cores for taco fillings. Chaia spins cilantro stems into pesto. And Lupo Verde turns yesterday’s polenta into today’s luscious gnocchi.

EatOrToss, which is based in DC, helped organize this effort and would love to hear what you think of any of the dishes you try. And, of course, we’d also like to hear about how any of those dishes might have inspired you to do anything differently in your own kitchen.
